Preheat Cycle
This knife heats up very hot just after plugging in. After 6 minutes or so it settles down to it's operating temp. Make sure it is not covered with honey or debris while this preheat happens, It will burn! And don't unplug inbetween while doing some work, just place it on the holder, otherwise you have to clean it before plugging back in! Also, the temp. adjustment knob is clockwise for raising the temp. I've only used this knife one day, but it worked great after I figured this stuff out.
