Not all refractometers are created equal. When precision is key, this digital refractometer can’t be beat. With only a drop of honey or maple syrup, this instrument determines the water content, regardless of temperature. And the best thing is, plain jane water can calibrate it. Easy to understand, easy to use. After dripping sample of honey on the prism, wait 20 to 60 seconds before pressing the START/OFF switch so that the samples temperature and prism temperature approximate to each other. In such a case, stir the sample with a plastic spoon 3 or 4 times on the prism to shorten the time to equalize the temperatures of the sample and prism.

After measuring, use a lint-free tissue to wipe the sample off of the prism surface. If the sample contains oils or fat, use isopropyl alcohol and water to clean the prism surface.
When not in use, keep the instrument in the storage case at room temperature (68°F). Avoid storing the unit in direct sunlight or in a moist environment and do not subject the unit to strong shocks or vibrations. The ambient temperature at which you can safely store the unit is between 32 and 104°F.
